Backyard Pappardelle

In this delightful creamy pasta dish we are showcasing our local farms and artisans here in our own “backyard”. Beautiful assortment of Mushrooms and wasabi micro greens from Mush-Love Greens, balanced with sweet onions and Muranda Cheese’s Smoked Gouda.

Roasted Chicken

Chicken quarters rubbed with bold spices including freshly ground toasted cumin and Aleppo pepper. Paired with the sweet and earthy flavors of a vanilla and parsnip purée. What’s an Austrian influenced dish without cabbage?! This flavorful infinity is rounded by the addition of braised red cabbage with bacon and caraway seed.

Braised Short Ribs

Using our local Butcher, Schrader Farms for their short ribs. We don’t need to do much to make them delicious! However we braise this cut with tomatoes, garlic, onions, fresh thyme and Lemberger (of course) doesn’t hurt. Served over it’s own braising liquid and paired with a sweet and peppery sweet potato Gnocchi that plays into the richness of the rib while giving the plate a texture of soft pillows pan fried in brown butter and sage.
